Tri Tip (Clayton, NC)

The Tri Tip cut comes from the tip of the sirloin, and was made popular in California.  Much smaller than a brisket(generally 1.6-2.2lbs), but is equally delicious when cooked low and slow on a smoker.  You can also quickly sear it, then finish cooking using indirect heat. Our Cattle are pasture raised and grass fed in Clayton, NC!
