Chuck Eye Steak (Clayton, NC)

This cut comes from the chuck primal and is a great low-cost alternative to the Ribeye Steak. I highly recommend using this cut for making some of the most tender and flavorful short ribs by braising the beef in red wine and beef broth with onions and carrots, then cutting into strips.
