Smoked Jalapeño Mac & Cheese

8 cups of macaroni pasta

5 Tbsp butter

5 Tbsp flour

1 1/2 cup homemade chicken broth

1 1/2 cup half and half 

1 1/2 cup whole milk

1 cup cream cheese

10 cups of cheese ( white sharp, sharp, Gouda, pepper jack, aserda, mix it up)


start your smoker, get some jalapeños on there 

You need a pot of boiling water for pasta and you need a sauce pan for making the cheese sauce 

1. Put butter in sauce pan on medium, add the flour in and whisk briskly for minute or so… In the other pot with boiling water, start your pasta, cook al dente 8 -9 minutes )

2. Slowly ( over 5 minutes or so) add in broth, half and half, and milk whisking constantly …then add cream cheese , keep it whiskin…then add the cheese and whisk until saucy……

3. Drain pasta and put in a large aluminum pan. Salt and pepper lightly 

4. Pour in cheese sauce . Take smoked jalapeños, de seed, and dice up, then add those to pan. Stir it up and level it out.

5. Put in smoker at 250 for 1 hour. Then bring pan inside , sprinkle more cheese on top and place under broiler in oven until golden brown.
