1. Roast 2.5lbs of tomatoes (sliced 1/4in or cubed/diced in small chunks) toss in olive oil, lightly salt and pepper and then roast 2 hours at 250. You can roast at higher temps for less time, but the longer and lower temp, the more flavor. 350 for an hour or 375-400 for 45 minutes, then shut the oven off and let them sit there will work fine too. Sometimes I do this at night before bed, just get them toasted, shut the oven off, and let them sit all night long. The next morning they are good to go. You want to make sure you get some char on the tomatoes, not too much but, just a little.
2. Set oven to 350. Sautee 1 sweet onion until it caramelizes. You can use green peppers too here, but their flavor can sometimes overpower the roasted tomato sweet goodness!, so I prefer just onions
3. Get a bowl and at least a cups worth of shredded cheese out. I use different cheeses all the time to change the flavors up a bit, so get creative! 0.5 cup gouda cheese(or Italian Blend) 0.5 cup parmesan, 1⁄4 cup dukes mayo/greek yogurt mix (You can use all dukes mayo and mix up different cheeses) I like to add some feta cheese too!
4. When mixing the cheese and mayo add 1.25 tsp salt, 1.25 tsp pepper, 1Tbls oil, 1⁄2 cup of fresh herbs(oregano, chives, parsley, basil). You can use dried herbs, but the final dish will taste more like a pizza than a tomato pie. It will still be delicious, but the fresh herbs seem to help set it apart from the pizza taste.
5. Get a box of Pillsbury Pie shells like you find near the cookies and butter in the grocery store. Take one roll out, unroll it, and lay it in your glass pie dish. Put in onions (and green peppers if you like those) on the bottom of the pie shell. Adding spinach can also be a nice addition sometimes. Add the roasted tomatoes.
6. The cheese and mayo/greek yogurt in a bowl will be lumpy and pastey. I usually just spoon it out and blob on top of pie and try to even it out. It will melt and cook, so complete coverage at this step isn’t necessary and hard to achieve, but it will cook and spread out
7. Sprinkle some basil and oregano on the top.
8. Mix egg yolk and heavy cream and brush on crust and top of pie. (Optional)
9.Bake for 30 -45 min at 350, just let the cheese get golden brown
